
Our cuisine
Origins
Al Rocol was born from a passion for authentic cooking and a desire to celebrate the Trentino region. A project rooted in tradition yet forward-looking, bringing honest flavours and carefully chosen products to the table.
The name comes from the family maso (mountain farmstead), "Il Rocol": this is where it all began, among the roots and affections of home. A bond with the land that we bring to the table every day.


The kitchen
We work with selected local producers, following the rhythm of the seasons. Nothing is forced: every ingredient reaches the table at the moment it expresses itself best.
Mountain-pasture cheeses, mountain herbs, mushrooms, wild venison and lake or river fish. The selection is rigorous and respect for the raw ingredients is the foundation of every recipe.

We are in the heart of Val Rendena, at the foot of the Brenta Dolomites — a UNESCO World Heritage site. A landscape that changes with the seasons and enters the kitchen as the main ingredient.
Pinzolo is a gateway to authentic Trentino: forests, high-altitude pastures, artisan producers and a deep gastronomic tradition that Al Rocol interprets with respect and creativity.
